Whats for dinner????
Ok, i have got chicken out for tea but im sick of the same old bland ways in cooking it, i want some creative and tasty things i can do for dinner, 1 problem tho, it needs to be basic to cook, no comlicated ingredients or hours in the kitchen, i dont do complicated as me and the kitchen dont really get on, we only do coz we have no choice!
So i want something easy to prepare, something thats really yummy and tasty, something that Jesse can enjoy as well as i dont wanna do seperate cooking for him (back to the kitchen and me not getting on)
so anyone got some yummy ideas? We need to eat more chicken in this house!

Re: Whats for dinner????
Well, I have a slow-cooker chicken and dumplings that I make, you could do it on the stovetop too if you dont have a cooker.
2c cooked chicken (cook it however you want, baked, sauteed, whatever. I usually get a rotisserie chicken from the store and strip about half the meat off it for this)
2 cans cream of chicken soup
1 can carrots, drained
1 can green beans, drained
1 can corn, drained
1 cup milk
Mix all together and heat through, on low on the crock pot 4 hours if doing it that way. In another bowl, mix 2c bisquick or other baking mix with 2/3 cup milk until mixed but still somewhat lumpy. Drop into the cooking chicken mixture and cook (on low 2 hours in the crock pot) or until the dumplings are no longer doughy.
Another variation I've done is to make the chicken but instead of dumplings, I use croissant dough and put the mixture on it, then bake it sorta like a pot pie.
Another recipe is to take chicken breast, cut it into strips. In a gallon ziploc bag, mix about 2c flour, 2-3tb cajun seasoning, and 2-3tsb seasoned salt together. Drop the chicken strips in and shake to coat, then sautee in a deep-dish pan with olive oil until browned and cooked. Then add a can of cream of mushroom soup, and a little milk to thin it to a gravy consistency. Add more cajun seasoning until it's as spicy as desired (you can keep out some of the gravy for the little one if you don't want to give them spicy foods yet) and serve over rice or potatoes (or with bread)

Re: Whats for dinner????
ooohhhh gosh that sounds yummy, im definatly gonna try the spicy chicken. Jess eats anyting we dish up really he isnt fussy, unless we having Indian, he doesnt like it too hot, but other than that he really good with his food, he isnt a fan of sweets either which is fantastic, i think its because i have never stopped him from having them and because he has been allowed them he doesnt really want them, at a Birthday party he goes for carrot and celery sticks with dip over anything else!
Id love some more creative recipes if anyone has got them!
